Maccaroni & Cheese in the Crockpot

Sometimes (always) doing schoolwork is hard and all you want to do is anything in the world besides your school projects. Well, I have to eat right? I have not had time to cook for weeks so this weekend I have been going a bit crazy and if I could I would be making many other recipes I've had in mind. It just feels so good to cook sometimes! Well, back to the fact that I do have to eat despite being extremely busy. So, I decided to throw this recipe in the crockpot this morning and this is the amazing cheesiness that resulted

I didn't follow the recipe exactly (that's my thing) and I still think it needs a few adjustments. It's a pretty fun recipe though. I used:

3 cups (instead of 2) of elbow pasta, 1 egg (I would forgo the egg next time), 1/2 t salt, 4 cups shredded cheddar, 4 cups skim milk, 1/2 t dried mustard, 1/2 t pepper

Beat the milk, egg, and spices. Add pasta and cheese and stir. Spray your crockpot with cooking oil. Add everything to the crockpot. Cook on High for 1-3 hours (depending on how hot your CP gets and the size of your crockpot). Could also cook on low for more time.

If you look at the comments on the blog the recipe is from, you will see that many people complained of the milk curdling. I think my milk curdled too. I am not very picky so I do not care. It did not ruin the dish. I hypothesize that the milk would not curdle if this was cooked slower on low, but who knows. I also think that the egg may give it a slight curdle-y texture so I would try this recipe without egg. Now that I've completely thrown everyone off of the recipe....try it. It's good though and worth it. Just don't be too picky. Lighten up a little, will ya? It was done after cooking on high for about 2 hours and 10 minutes. I left it on to cook to see if it would crisp up on top as some bloggers said it would. That's going down right now, so I don't know what the outcome will be. Ok, just checked on it and leaving it on for extra time was a bad idea. It's okay, but it was much better when it was first done. I recommend turning off the crockpot as soon as desired cheesiness (versus too much liquid) is achieved and noodles are desired softness. Also, I think I'm having such a hard time focusing today likely because everyone is celebrating their day off with picnics and camping and I am in my room writing a research paper on cognitive behavioral therapy and domestic violence. Ok bye. (But I must say, I am truly happy to be in school right now, some days are just a little hard.)

I don't know what you are complaining about, cognitive behavioral therapy and domestic violence are fascinating, especially on Holidays.
