Potato tomato galettes, fresh steamed broccoli and poached cod.
Potato Tomato Galettes - courtesy of my new mandolin! Preheat oven to 400 F.
Slice 3 potatoes thin as you can, toss in olive oil, salt and pepper.
Lay on greased (or parchment paper) cookie sheet in little piles, layering in a circular pattern until about 5" in diameter.
Slice tomatoes and toss in remaining oil and lay 2 slices on top of each potato pile.
Bake for about 15-20 minutes, until edges of potatoes start to brown and crisp.
Yummy!
Steamed Broccoli - wash, slice, steam, enjoy!
Poached Cod - boil a few cups of water (enough to cover the fish) in a large pot or pan.
Add some bouillon or "Better Than Bouillon" chicken flavor.
Add fresh or dried dill weed.
Add lemon juice and some lemon slices if handy. If not, just pour in some bottled lemon juice.
Boil for 8 - 10 minutes, until flaky.
